Grilled Orange Citrus Salmon

ingredients

  • 1 each Salmon portion, grilled
  • 3 oz Orange Citrus Sauce
  • 1/2 tbsp Italian parsley, fresh, chopped
  • 1/2 cup Rice, cooked

directions

  1. Grill salmon until both sides are marked, place in broil pan, cover with Orange Citrus Sauce and place in 500F oven until internal temperature of fish is 145F.
  2. Remove from oven, place grilled salmon on a bed of rice and garnish with parsley.

Orange Citrus Sauce

ingredients

  • 2 oz Butter
  • 1/4 oz Fresh garlic, minced
  • 1/2 lb Carrots, minced
  • 1/2 lb Leeks, minced
  • 1/2 lb Fennel
  • 2 oz White wine
  • 1/2 cup Orange juice
  • 1/4 cup Lemon juice
  • 1/4 cup Lime juice
  • 2 cups Orange Sauce (KG5014HG)

directions

  1. Add the butter to a saucepan, sauté garlic, add fennel, carrots and leeks and sauté for 1 minute.
  2. Glaze pan with white wine and add orange, lemon, and lime juice.
  3. Bring to a boil, remove from heat and blend in Orange Sauce (KG5014HG) with an immersion blender.
  4. Remove to storage container.
